Baking la pulak...simple choc cake

Alahai...since I dah start masak-masak semula ni, my kiddos dah start request for me to cook this and that..so lets hit the kitchen while the mood is still hot and not suam suam kuku...

Hari ni Idin minta chocolate cake. A few times when we go out for groceries, he kept on pointing to Pilsbury cake mix for me to bake him a cake. No Pilsbury today honeybunch but lets try  a cake recipe..

Classic Chocolate cake

55 g cocoa powder
7 tbsp boiling water
200g butter/margarine  softened plus extra for greasing
125 g caster sugar
70g light brown sugar
4 eggs, beaten
1 tsp vanilla extract/essence
200g self raising flour ( self raising flour substitution- 2 teaspoon of baking powder to each cup (150g) of multipurpose flour/plain flour)

Frosting

200g cooking chocolate
115 g unsalted butter
100 ml/ 3.5 fl oz double cream

Pre-heat oven 180c

Mix cocoa powder butter & water to smooth paste- set aside.
Put butter/margarine caster sugar, brown sugar- beat until pale& creamy and add in eggs  one at a time then add in vanilla extract/essence then add in cocoa paste.

Masukkan tepung, fold gently and pour in the mixture in cake tin and bake in pre heat oven for 35 mins or risen and springy to touch.

Nak buat frosting- letak chocolate& and butter dalam periuk atas satu lagi periuk atau saucepan of simmering water dan panaskan hingga chocolate&butter cair- (cooking chocolate Nona pun ok jer, nak makan sendiri..) Alihkan dari api dan masukkan cream.Leave to cool the chill in refrigerator for 30-450mn, kacau sekali sekalan until thick enough to spread..

Yummeh ..cake habis dalam sekelip mata!!tak sampai 1/2 jam pun....

Candy Kelapa- manisan dolu-dolu?

Jumpa balik manisan ni kat Bakeri Ria kat Melawati ni....punya la suka hati sebab this candy reminds me so much of my childhood days in Kuantan. My kids are so ga-ga over these coconut candy

I remember when I was in primary school, Assunta Convent, we always have this "Special Tuckshop" day...Special Tuckshop ni macam the school invited parents or outside people to sell foods different from the school canteen. This coconut candy would only be available during the special tuckshop.

Anyway, when one of our older cousin stayed with us, she attended home science class and taught me how to make this candy.




2 biji kelapa

1 tin susu pekat

1/2 gula

2 sudu margerin /butter (dulu-dulu orang jarang pakai butter, yg famous Planta atau Daisy margerin)

1 sudu kecil vanilla essence

Goreng kelapa sehingga kering (jangan sampai jadi kerisik pulak)
Bila dah agak kekuningan, masukkan gula & susu pekat- kacau
Masukkan mentega, kacau sehingga sebati bersama adunan
Goreng&kacau di atas api sehingga kelapa tak melekat di kuali- masukkan pewarna&gaul rata-rata
Tuang ke dalam bekas dah tekan-tekan bagi padat.
Potong sebelum adunan terlalu keras...

Bubur Lambuk- Pantai Timur style



Bubur lambuk is one of the East Coast or Pantai Timur traditional dish. Its congee mix with fish fillet. Its very famous during the fasting month. So, bila bulan Ramadhan, I mesti masak bubur lambuk at least sekali dalam the whole of fasting month..Kat KL ni yang famous is Bubur Lambuk Kg. Baru, pernah la rasa tapi since my tekak ni tekak orang Pantai Timur, so rasa tak puas bila makan bubur lambuk Kg.Baru.Yang ada jual kat Bazaar ramadhan tu lagi la tak menepati citarasa...

Bubur lambuk ni very special to me because it reminds me of my life in kampung when I was small, with  arwah my grandparents& arwah my nanny Awok. When I was studying in Uni, on weekends during fasting month, its a must that I'll go and see my Nanny in Bukit Teratai, Cheras to eat bubur lambuk...

Anyway, since I love this bubur lambuk or congee so much she then pass me the recipe..here goes

1 pot of rice  for congee (masak bubur)
5-10 biji bawang merah/shallots- tumbuk atau blend
2 sudu kecil lada hitam yg sudah ditumbuk(1 teaspoon of grind blackpepper)
1/2 kg  santan (coconut milk)
1/2 in or 2 cm halia/ginger- ditumbuk/blend
5 ekor ikan kembung/selar-direbus dan diambil isinya

1 ikat pucuk paku merah
-pucuk paku merah ni sangat susah nak dapat sekarang, sekali sekala ada la jual kat Pasar Tani
1 ikat daun kesom
2-3 helai daun kunyit
1 ikat daun kemangi
1 ikat daun selasih

* potong semua ulam ulam kampung di atas.

1. Masak bubur kosong
2. Bila bubur dah siap-masukkan isi ikan kedalam bubur yg sudah di masak& kacau
3.Masukkan bawang merah,halia *lada hitam yang sudah ditumbuk& kacau
4. Masukkan santan kedalam bubur yand sudah di masukkan bahan-bahan diatas dan kacau lagi.

Tunggu sekejap kemudian masukkan kesemua daun-daun ulam yg sudah dipotong. Bila dah agak sebati, daun sudah sedikit layu tutup api dapur...

Walla!-sudah siap utk dimakan..
